Line Cook
Job description: Folio Enoteca will be opening in the Napa Oxbow Public Market
in December 2007. The Folio Enoteca will offer visitors a selection of fresh
foods, world class wines, 'in the kitchen' merchandise as well as opportunity to
experience a micro-winery. Cooks must be able to provide outstanding customer
service in a fast paced environment.
We are looking for full-time and part-time (lunch coverage) Cooks.
Following recipes provided by the executive chef, prep and prepare raw
ingredients for the day's menu.
Assemble sandwiches and other take-away items for the "grab and go case"
maintaining appropriate levels throughout the day.
Throughout the day, prepare hot and cold food items to order.
Maintain consistency in food quality standards.
Follows prep list standards.
Proper use of recipes and procedures.
Rotate all products. Label and date all food in kitchen.
Use preventative maintenance with all kitchen equipment. Train on
potential hazards and general safety.
Ensure compliance with all state of California Health codes and maintain
high standards of cleanliness in kitchen area.
Communicates all stocking needs for kitchen operation with special
attention to freshness dates.
Capable of receiving product. Recognition of inferior products and the
ability to return with vendor/driver.
Helps serve customers, as needed.
Perform other duties, as assigned by executive chef and follow through
on supervisor requests in a timely manner.
Knowledge, skills and abilities required:
2-3 years culinary experience.
Some deli experience a plus.
Ability to multitask in a fast- paced environment.
Basic understanding and appreciation for wine and the wine industry in
Napa Valley.
Patient and enjoys working with people.
Ability to perform physical requirements of the position: Standing and
walking for extended periods of time, up to 8 hours. Bending and stooping.
Ability to lift 40 lb (case of wine) repeatedly.
Ability to work well with others as a team.
Strong organizational and time management skills.
Knowledge of all relevant Folio policies and standards.
Understands and can communicate quality goals to customers.
Must be 21 years of age.
Ability to work Saturdays, Sundays and holidays (except Thanksgiving,
Christmas and New Year's Day).
